If I've learned anything from Pinterest, it's to expect the worst but hope for the best. After a "super simple" glass-cutting tutorial that led to a singed eyebrow, I've learned my lesson. Thankfully these cookies from Katrina's Kitchen did not disappoint. They were easy to make and came out pretty perfect - soft, chewy and the shapes completely intact. If you are planning on making any for Christmas, give this recipe a try!

ingredients: 1 cup unsalted butter, 1 cup granulated white sugar, 1 tsp vanilla extract, 1/2 tsp almond extract, 1 egg, 2 tsp baking powder, 3 cups all purpose flour

Preheat oven to 350. Cream together butter and sugar until smooth. Add in extracts and beat in egg. In a separate bowl, combine the baking powder and flour, then add it slowly to the wet mixture. Roll out onto a floured surface and cut 1/4" thick. Bake for 6-8 minutes. Let them firm up on the baking sheet before transferring to a cooling rack. When completely cooled, frost them and add sprinkles!
